This used to be my favorite snack in my childhood days prepared by my mom.In my school days my mom used to make this as afternoon snack.I have done little modification on the original recipe of mom to make it little more healthy.Mom used to spread mashed potatoes on the bottom side before topping it with vegetables.But currently when I make this I omit that mashed potatoes.But obviously mashed potatoes add more taste to it.So on some sinful days when I can't resist myself,I add mashed potatoes.Also mom always used chana(grated paneer) to make this dish and it has less calorie than normal cheese.So here goes the healthy and quick recipe.

  1. Bread Slices - 3
  2. Onion rings - 4
  3. Cucumber rings - 4
  4. Tomato rings - 4
  5. Capsicum ring - 1
  6. Cabbage leaves/Lettuce leaves - 1-2
  7. Mayonnaise to be spread on bread
  8. Butter to be spread on bread
  9. salt a pinch
  10. pepper powder a pinch
  11. Cottage cheese(chana or grated paneer) or normal cheese
For the mint chutney

  1. Mint/Pudina leave - 1 bunch
  2. Curd - 1 cup
  3. Garlic clove - 2-3
  4. salt to taste

Grind all the ingredients together for the mint chutney.
Put the cabbage leaves in the boiling water for 8 minutes with little salt.Then take out them from water and cool under running cold water.Cut them into sizes to fit the bread slice.If you are using lettuce leaves then no need to boil them.You can directly put lettuce leaves on bread.
Take a bread slice and place cabbage/lettuce leave on top of that.
Apply little mayonnaise on top of the leaves.
Then place onion,cucumber and capsicum.
Apply the mint chutney on another bread slice and place it on top of the vegetables.

 On top of the other bread apply little butter.
Place the tomatoes on top of that.
Sprinkle cottage cheese or normal cheese to cover the tomatoes.
Sprinkle some salt and pepper on top.
Take another bread slice and apply mint chutney on one side and keep that side on top of the tomatoes.

 Now apply little oil on a griddle and grill both the sides of the sandwich.Or you can grill them for 10 minutes in a micro-oven.

 Once grilling is done cut them into halves and serve hot with tomato sauce.
